Fructose products appeared as an alternative to sucrose in the food field at first. Because the fructose products have incomparable performance advantages over sucrose, the fructose products gradually completely or partially replace sucrose in many fields of food processing. * Fructose used in medicine is crystalline fructose, not high fructose syrup. Because the glucose content of HFCS severely interferes with the medicinal effects of fructose. For example, diabetics who take crystalline fructose have the glycemic index of only about 20, while those who take HFCS with F-55 have a glycemic index of 50-60, almost as high as those who take sucrose.
